LES CRÊPES

I love crêpes / pancakes of all sorts. One of my favorites is a crêpe au sarassin, made with sarassin flour, filled with ham cheese and egg. It is usually folded into a square and served with a mini salade and sour cream . Delicious also for breakfast. The best ones are of course to be eaten in Paris, but there are some very good crêpes in Berlin also.
Sarrassin flour is buckwheat in english. And the crêpes are actually called galettes when they are made of sarassin flour. It is quite an art making them because they tend to dry out on the outside , ( if you are not a master in cooking them). But this one is perfect! To follow Mathilde on her gourmet tours , check out :
